The dark arts of Black Buttercream

There is no denying that black cakes are the ultimate statement piece. They are dramatic and sophisticated, and they have an undeniable impact on any celebration. However, creating that perfect midnight hue comes with a unique set of technicalities, some amusing side effects and a few trade secrets that clients rarely consider.

If you are dreaming of a dark and moody cake for your next event, here is everything you need to know before you place your order with us.

The Alchemy of Black Food Colouring

Have you ever wondered how Manly Baker achieves that deep black buttercream shade? It is not as straightforward as simply opening a bottle of black paint.

In the confectionery industry, black gel colours are actually made up of a complex array of different pigments. For instance, the specific brand we trust here at the bakery starts with a deep green base. From there, the colour is built up and layered until the pigments blend perfectly to create that rich, striking black. Because it relies on layering heavy pigments, black buttercream actually intensifies and deepens over time as it rests.

The best part is that black buttercream works beautifully across a whole range of icings: standard buttercream, silky Swiss Meringue or rich ganache. It creates a stunning, luxurious contrast that makes other colours or gold leaf absolutely stand out.

The Big Debate: Buttercream vs Fondant

When deciding on the finish of your black cake, you need to consider the type of event you are hosting.

Why We Might Advise Reconsidering Buttercream for Prestige Events

If you are celebrating a major milestone, such as a prestigious corporate event, a beautiful wedding or a 21st birthday, we would not usually advise choosing black buttercream.

The heavy pigments required to make that gorgeous dark black buttercream shade will stain your teeth, tongue and mouth. If you are going to be mingling, drinking champagne and taking hundreds of photographs, the last thing you want is a sudden stained smile in the official event photography.

The Luxury Alternative: Black Fondant

For those high-profile events, black fondant is your best partner. Fondant can simply be peeled off by guests who prefer not to eat it, eliminating the stained-mouth dilemma.

However, achieving a clean, sharp look with fondant requires a proper foundation. To give the cake a good structure, we use a firm undercoat of either milk chocolate or dark chocolate ganache. This base gives you neat edges and a clean finish, though it does mean working with fondant comes with a higher financial investment.

Our Secret Weapon: Black Cocoa Powder

We want your cake to taste just as incredible as it looks. Adding heaps of artificial gel colouring to a white buttercream can sometimes leave a bitter aftertaste; frankly, nobody wants that.

To resolve this issue, we use a premium trade secret: black cocoa powder.

By using this intensely dark, natural cocoa as the base of our buttercream, we can create a rich, dark foundation from the very start. Because the icing is already deeply dark, we only need to use a fraction of the actual gel food colouring to reach that perfect midnight black. This method keeps our buttercream tasting absolutely delicious, rich and chocolatey, whilst significantly reducing the amount of dye in the recipe.

The Side Effect Nobody Talks About Until Now

Let us be completely honest for a moment: black icing comes with a rather hilarious, slightly shocking guarantee.

Even with a black cocoa base, those heavy green and purple underlying pigments mean that eating black buttercream will likely turn your stool a vivid shade of green or purple a day or two after the party.

In the past, we have had clients panic, thinking something was seriously wrong. Now, we always give our clients a friendly warning beforehand:

"Don’t panic when you visit the toilet tomorrow; it is just the food colouring doing its thing!"

If you are open to the challenge and do not mind the colourful aftermath, we are always happy to make it happen and give you exactly what you want.

Looking for Alternatives?

If you still want that striking buttercream look but wish to completely bypass the stained teeth dilemma, there are always creative alternatives we can explore together. For example, we can use an airbrush technique. By frosting the cake in our dark cocoa buttercream and lightly spraying just the outermost layer with a fine mist of black food colouring, we achieve the dramatic look with only a fraction of the surface pigment.
